Some Interesting Summer Mango Recipes

Mangoes are my all time summer favorite. So, here I present some interesting and mouth watering mango recipes,which you can easily whip up on a lazy summer day...
1) Mango Mousse 




Ingredients: 

4 lb Ripe mangoes 

2 egg whites
1 tblsp unflavored gelatin
1/2 cup granulated sugar
1/2 cup heavy cream 

1/2 cup lime juice
Pinch of salt

Directions :
1) Peel the mangoes, slice the flesh off the seeds, and add the puree in an electric blender with the lime juice. Be careful not to over -blend. There will be 5 cup of puree. 

2) Stir in the sugar. 
3) Now, dissolve the gelatin in 1/4 cup hot water, cool, and stir into the mango puree. 
4) Beat the egg whites with the salt until they stand in peaks. Whip the cream until it is stiff. 
5) Fold the cream into the egg whites, then fold this mixture gently into the mango puree. 
6) Pour into a big size serving dish, or into individual dishes, and chill in a freezer for 2 to 3 hours, or until set. 


2) Mango Delight 



Ingredients :
3 cups mango pieces 

3 tbsp gelatin
7 and a 1/2 tsp icing sugar
1 cup fresh cream
1 and a 1/2 cups tiny bits of mango slices (optional) 


For Decoration:
Whipped cream & sliced mangoes (optional)

Directions :
1) Put mango pieces, icing sugar, dissolved gelatin in a blender and blend for 1 minute or till it becomes a fine pulp. 

2) Add fresh cream and blend till mango pulp mixes with the cream. 
3) Stir in mango bits and set in wet mould in a refrigerator or on ice. 
4) Decorate with whipped cream and sliced mangoes before serving. 


3) Mango Lassi




Ingredients:

3 cup plain yogurt
1 cup milk
1 cup water
1 cup mango pulp
1/2 cup sugar
1 oz pistachios, ground 


Directions:

 
1) In a pitcher, blend the yogurt, milk, water, pulp, and sugar. 

2) Whisk briskly until completely mixed and then chill it in refrigerator. 
3) To serve, pour over crushed ice. 
4) Sprinkle the ground pistachios over the top, makes 4 to 6 servings.
